Why angeethi

An angeethi is the clay coal stove North Indian homes cooked on for generations, slow and smoky and always lit.

We kept the idea. Breads are slapped onto the tandoor wall as you order them, kebabs go straight onto the charcoal, and the dal makhani sits on the embers overnight before it reaches your table.
